This exclusive bottling is a blend of the finest barrels of our Cabernet Sauvignon from Beckstoffer To Kalon Vineyard. The famous To Kalon Vineyard is located on the western bench of the Oakville AVA, in the geographic center of Napa Valley. The 2008 growing season gave this wine especially intense aromatics and muscular tannins. We hand harvested the To Kalon grapes and then hand sorted them twice at the winery for optimal quality. This is a powerfully structured, deeply flavored wine, capable of even greater complexity with bottle aging. This wine is worthy of a celebratory candlelight dinner. (And every day is worthy of a celebration!)

Tasting Notes

With its intense aromas and deep cassis and blackberry flavors framed by muscular tannins, our 2008 Beckstoffer To Kalon Vineyard Cabernet Sauvignon shows off its vineyard and vintage sourcing. Layered nuances of black cherry, ripe plum, violet, rum raisin, mocha and forest floor slowly unfold with each swirl and sip. The lingering finish picks up black cherry and ripe plum notes. Powerful, yet velvety, this wine is fit for a candlelight dinner celebration, especially paired with a leg of lamb with juniper berries or filet mignon with Cabernet reduction sauce.

Vineyard Notes

To Kalon Vineyard was first planted in 1868 by viticulture pioneer Hamilton W. Crabb. The vineyard’s angle of sun exposure, its mesoclimate and its deep, alluvial-fan soils foster grapes with complex flavors and exquisite balance. Located in the Oakville American Viticultural Area (AVA), it is one of California’s finest sites for Cabernet Sauvignon. Our grapes come from the Beckstoffer Vineyard, a section of To Kalon that is trained to bilateral cordon with vertical shoot positioning. Clusters are positioned for optimum sun exposure to develop fully ripe, lush flavors, which then turn into a myriad of complex fruit, spice and floral notes during winemaking.

Vintage Notes

The 2008 growing season presented its fair share of challenges for California’s winemakers, yet this Cabernet Sauvignon proves that Napa Valley was blessed—once again—with many truly remarkable wines. Mother Nature’s mood vacillated between agreeable and moody, yet provided enough ideal days for the grapes to reach full maturity. We harvested these perfectly balanced grapes from early through late October.

Winemaking Notes

To achieve a wine of great elegance while capturing the intense To Kalon flavors, Chris fermented a portion of the must in new French oak barrels to soften and integrate the bold tannins. The balance of the grapes was cold soaked for gentle extraction and fermented in stainless steel tanks. Following extended maceration and pressing, the wine completed malolactic fermentation in barrels to round the acidity. Four rackings naturally clarified the wine, as warm oak spices married with the opulent dark-fruit expression.
