This exclusive bottling is a blend of the finest barrels of our Cabernet Sauvignon from Beckstoffer To Kalon Vineyard. The famous To Kalon Vineyard is located on the western bench of the Oakville AVA, in the geographic center of Napa Valley. Spicy, toasty nuances from new oak barrels balanced To Kalon Vineyard’s intense, dark-fruit expression. Plush tannins and excellent balance give this wine great bottle-aging potential. After increasing in complexity for more than a decade, the wine will remain on a plateau for many years.

Tasting Notes

Our 2005 Provenance Vineyards Beckstoffer To Kalon Vineyard Cabernet Sauvignon speaks to the terroir of this historic Napa Valley vineyard. Intense black cherry, red currant and plum character permeates the heady aromas and velvety flavors. Nuances of mocha, licorice and cedar add complexity to the sumptuous dark fruit expression. The expansive flavors fan out across the palate and then linger with hints of espresso and dark chocolate on the finish. The mouth-coating, chewy tannins firmly structure the wine, promising cellar worthiness. Twenty-one months of barrel aging integrated the diverse flavors of To Kalon Vineyard terroir, while adding soft oak spice notes.

Vineyard Notes

To Kalon, one of Napa Valley’s most famous vineyards, was first planted in 1868 by viticulture pioneer Hamilton W. Crabb. The vineyard’s angle of sun exposure and complexity of soils foster diverse flavor profiles in the grapes. Located in the Oakville American Viticultural Area, it is one of California’s finest sites for Cabernet Sauvignon. Our grapes come from the Beckstoffer Vineyard, a section of To Kalon that is trained to bilateral cordon with vertical shoot positioning. Clusters are positioned for optimum sun exposure to develop fully ripe, lush flavors. When the grapes reached peak maturity, we carefully hand harvested the clusters into half-ton bins at the break of dawn.

Vintage Notes

The 2005 vintage provided long hangtime for notably rich Cabernet Sauvignon flavors with balanced acidity. Heavy winter rains during vine dormancy gave way to a dry, mild March. Significant rains returned in April and May, delaying bloom and berry set. Summer temperatures were desirably mild, with few heat spikes. September’s fog and cool temperatures slowed sugar accumulation, and then perfect conditions arrived in October for a late harvest.

Winemaking Notes

Winemakers Tom Rinaldi and Chris Cooney bridled To Kalon Vineyard’s intense flavors and brawny tannins by cold soaking the partially crushed grapes (60 percent whole berry) for gentle extraction, fermenting them in small bins with hand punch-downs of the cap, extended maceration and six gentle rackings.
